The long handle makes it easy to move and tilt the wok when stir-frying. The wok also has a small "helper" handle on the other side, providing the wok an easier way to lift it. The wok conducts heat evenly and it spreads heat evenly. Also uses less oil for deep-frying than a traditional deep-fat fryer. It ensures that food tossed during stir-frying lands back in the pan and not on the stove. This is ideal for a restaurant, chef, buffet and more. It is mainly used for commercial grade.
